TASTED GREAT!
Tried out the white chicken chili recipe below, and it was VERY good! I actually tripled the recipe and had some family over, so there were 10 of us. Still have enough for dinner for two tonight! The two younger children just ate the chicken! :) Going to move a couple pieces of furniture in the dining room today and going to a Pampered Chef party tonight. This one is about preparing and freezing 12 meals! That works for me!

DELICIOUS CHICKEN CHILI
This wonderful recipe was made and served to us last night by our good friend Patsy! She said I could share it here.
1 # chicken breasts
1 onion
2 cloves garlic
16 oz box chicken broth
1 or 2 cans diced chilis
2 cans white beans
2 cans kidney beans
1 tsp oregano
1 1/2 tsp cummin
salt & pepper
Cut chicken breasts into bite size chunks, saute along with onion and garlic, in olive oil until chicken is white. Add broth, chilis, beans and seasoning. Bring to a boil and simmer at least 20 minutes. She simmered longer, just to be sure the chicken was fully cooked. Serve with a green salad and your favorite bread. Serves 3 or 4. This would also be a good recipe to put in the crock pot and slow cook all day!

Quick & Easy Dinner
Found a recipe I really like. Preheat oven to 350.
Smoked sausage ring, cut in 6 equal sections. Slit each section nearly through, lengthwise. Cut 3 slices of swiss cheese in half, then fold each piece in half, placing in the slit sausage section. Boil 6 lasagna noodles, following directions, rinse in cold water, pat off excess water. Roll each sausage/cheese section in a lasagne noodle, placing in a 9x9 baking dish. Pour over one jar of your favorite spaghetti sauce. (I like tomato basil garlic flavor) Bake 30 minutes. Serve with spinach salad, loaded with colorful veggies, and garlic bread, found in your grocer's freezer aisle.
